 Ingredients: 
 3 cups fresh spinach leaves, washed and chopped 
 3 medium-sized potatoes, peeled and diced 
 Optional 2 tomatoes, chopped Or 1 pinch Amchoor, unripe mango powder 
 Optional 1/4 teaspoon grated ginger 
 1/2 teaspoon cumin seeds 1/4 teaspoon hing (asafoetida) 
 1/8 teaspoon methi seeds (fenugreek seeds) 
 1/4 teaspoon black pepper powder 
 1/4 teaspoon garam masala 
 Salt to taste 
 2 tablespoons mustard oil

 Instructions: 
Heat mustard oil in a pan. Add cumin seeds, hing, and methi seeds, letting them splutter. 

 Add diced potatoes and cook for 5-7 minutes until they start to soften. Add chopped spinach and (tomatoes and ginger, if using) mix well. 

Cover and cook until the spinach wilts and the potatoes are fully cooked. Sprinkle garam masala and amchoor (if using), and mix.
