homemade Simple Carrot Soup

This simple carrot soup tastes good and helps detox the body. It has no onion or garlic and can be cooked for Thakurji’s bhog.

Ingredients:

1/2 Kg carrots, peeled and chopped

1 potato, peeled and diced

4 cups water

1 tablespoon olive oil or any oil that you like

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Lemon wedges for serving (optional)

Instructions:

In a large pot, heat olive oil or any other oil you like, over medium heat.

Add chopped carrots and diced potatoes. Sauté for a few minutes until slightly caramelised.

Sprinkle ground cumin over the vegetables. Season with salt and pepper to taste. Stir well. Add 4 cups of water to the pot. Bring the mixture to a boil, then reduce heat to simmer. Cover and cook until the vegetables are tender (about 20-25 minutes).

Use an immersion blender or transfer the mixture to a blender to puree until smooth. Be cautious as the mixture will be hot. If the soup is too thick, add more water until you reach your desired consistency. Taste and adjust seasoning as needed. Add more salt, pepper, or cumin if desired. Ladle the soup into bowls. Garnish with fresh cilantro or parsley.

Optional: Serve with lemon wedges on the side for a citrusy kick.
