Vegetarian Russian Rice Pudding with Berries

Ingredients:

  • 1 cup rice
  • 2 cups water
  • 2 cups milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Fresh berries (such as strawberries, blueberries, or raspberries) for topping

Instructions:

  1. Rinse the rice thoroughly under cold water to remove excess starch.
  2. In a saucepan, combine the rinsed rice and water. Bring it to a boil over medium heat.
  3. Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-20 minutes until it's cooked and the water is absorbed.
  4. In a separate saucepan, heat the milk over medium heat until it starts to simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  5. Add the cooked rice to the simmering milk and stir well.
  6. Add honey or maple syrup, vanilla extract, and salt to the mixture. Stir until everything is well combined.
  7. Continue to simmer the rice pudding over low heat for an additional 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.
  8. Remove the rice pudding from heat and let it cool slightly.
  9. Serve the rice pudding warm or chilled, topped with fresh berries.
  10. Offer this ‘Sheetal Bhog’ to Sri Krishna in summer afternoons.

This rice pudding is a comforting and sweet Russian dessert. The rice is cooked in milk and sweetened with honey or maple syrup, and it's delicious when topped with fresh berries.  It is Pitta pacifying and increases kapha.
